Bright citrus, dry gin, and a restrained touch of anise.

The build
Tools for this drink
Ingredients
| ml | oz | Ingredient |
|---|---|---|
| 30 ml | 1 oz | Gin |
| 30 ml | 1 oz | Cointreau |
| 30 ml | 1 oz | Lillet Blanc |
| 30 ml | 1 oz | Fresh lemon juice |
| 1 dash | Absinthe (a dash is about 1 ml) |
Start with a dry gin whose juniper stays clear. Gin notes are in What you can change.
Method
- Add all five ingredients to a shaker with ice.
- Shake for 10 to 12 seconds.
- Double strain into a chilled coupe.
- Serve up. No garnish for this house build.
Notes and tips
- Use one dash of absinthe, not an unmeasured splash. Dash size varies by dispenser. Keep the same bottle and dispenser when comparing builds.
- Double straining means pouring through the Hawthorne strainer on the tin and a fine-mesh strainer held over the glass.
- Cocchi Americano changes the aperitif’s character; taste it as a variation.
Pair with
Smoked trout on a small toast
Citrus gives the oily fish a fresh counterpoint. Keep the smoke gentle so it leaves room for the gin and the light anise accent.
Fennel and orange salad
Fennel echoes the absinthe’s anise aroma; orange connects with the liqueur. Use a restrained dressing so the plate does not overwhelm the drink’s acidity.
“At the table, I would keep the first bite light enough for the citrus and botanicals to remain clear. A small toast or a piece of fish gives the drink company. The aim is a welcoming start.”
George Logue
